BBQ Chicken Salad (Debbie)


Chicken:
4 boneless skinless chicken breasts                         
1 TBS. olive oil                                                     
1 TBS. fresh garlic, mined
1/4 cup soy sauce
1 1/2 tsp. salt

Salad:
1- 8 oz salad mix (carrots, cabbage, etc)                
1 head romaine lettuce                                        
10 sprigs cilantro                                                  
1/2 bulb jicama                                                   
3/4 cup black beans                                               
3/4 cup of corn        
2 1/2 cup shredded Jack cheese                 
2 tomatoes                              
6 green onions, chopped
1 cup ranch dressing
Tortilla chips

Chicken:  Preheat oven to 350°. In mixing bowl, prepare sauce by combining olive oil, garlic, soy sauce, and salt. Place chicken in a pan or cookie sheet.  Pour sauce over chicken breasts and marinate for 20 minutes.  Bake for 40 minutes or until done. Cool chicken in the refrigerator. Once cool, cut into 1/2” cubes.  Pour BBQ sauce over the chicken and toss to coat it. Set aside.

Salad:  Rinse and dry salad mix, romaine lettuce, and cilantro. Chop romaine and cilantro. Mix together in a large bowl with the salad mix.  Wash and peel jicama. Cut into thin strips and set aside. Rinse and drain beans and corn.  Rinse and dice tomatoes. Add jicama, beans, corn, and jack cheese to the lettuce mixture.  Top with tomatoes, chicken, and green onions. Serve with ranch dressing and tortilla chips on the side.

1 lb. bacon in 1 inch slivers
1- 15 oz. can black beans
1- 15 oz. can dark red kidney beans
3- each 15 oz. cans baked beans or pork and beans
1 large sweet onion, finely chopped
1 red bell pepper, cored, seeded, and finely chopped
1 poblano or green bell pepper, seeded and finely chopped
2 cloves garlic, minced
4  jalapeno peppers, seeded and diced (for hotter beans, leave the seeds in)
2 cups barbeque sauce (KC Masterpiece)
1 1/2 cups brown sugar
1/2 cup Dijon mustard
1 1/2 tsp. liquid smoke (opt)
2 drops habanero sauce
Coarse salt and pepper, to taste

Fry bacon until crisp and golden brown.  Save a couple of tablespoons of bacon fat for the beans, if desired.  Empty the black and kidney beans into a colander and drain.  Rinse the beans under cold running water and drain again.  Add all of the ingredients to large crockpot and cook on low all day.  YUM!!!

Barbeque Spare Ribs (Jannie)


2 lbs. spare ribs

Sauce:
2 TBS. brown sugar                                                          
1 tsp. salt                                                              
1/4 tsp. chili powder                                             
1/4 cup vinegar                                                      
1/4 cup ketchup                                                     
1 TBS. Paprika
1 tsp. dry mustard
2 TBS. Worcestershire Sauce
1 cup tomato juice
1/2 cup water

Brown 2 lbs. spare ribs.  Mix Sauce ingredients and simmer 15 minutes or until slightly thickened.  Put over ribs.  Bake at 350° for 1 1/2 - 2 hours. Cover last 30 minutes.   Great to cook in the crock pot on low all day long.

Barbeque Halibut Steaks (Debbie)


1 (1 pound) halibut steak                                        
2 TBS. butter                                                                   
2 TBS. brown sugar                                                 
2 cloves garlic, minced
1 TBS. lemon juice
2 tsp. soy sauce
1/2 tsp. ground black pepper

Preheat grill for medium-high heat.  Place butter, brown sugar, garlic, lemon juice, soy sauce, and pepper in a small saucepan. Warm over medium heat, stirring occasionally, until sugar is completely dissolved.

Lightly oil grill grate. Brush fish with brown sugar sauce, and place on grill. Cook for 5 minutes per side, or until fish can be easily flaked with a fork, basting with sauce. Discard remaining basting sauce.

Chicken (bone in and skin on are best)
Salt
Pepper
Garlic Salt
BBQ Sauce (See Homemade recipe below)

Salt, pepper and garlic salt chicken and bake in oven until nearly done (Almost an hour for bone-in).  Add homemade BBQ sauce and grill until done!

Homemade BBQ Sauce (Stefanie)



2 cups Ketchup (Del Monte or Hunt’s)             
¼ cups Mustard                                           
1/8 cup Vinegar                                            
¾ cups sugar (You can use less to taste or     
Honey, agave, or sugar substitute)                
Garlic Powder
Salt & Pepper
onion powder
Hickory Smoke Flavoring
¼ cup Worcestershire Sauce

Mix all together.  Enjoy!
